 welcome to my easy recipes page. i'm the type of person who can't stand cooking and my mind tends to go completely blank when asked "what's for dinner?" i hope to make a collection here of EASY recipes... please be respectful that these are just ideas for myself and others. i'm not claiming anything on here to be gourmet. some things as easy as PB&J might even end up here to jog my memory later. enjoy!

sausage balls |
- 16oz jimmy dean hot sausage
- 2 cups sharp shredded cheddar cheese
- 1.5-2 cups bisquick

mix by hand, adding bisquick slowly until it's the right consistency
bake 350F for 15-20 minutes |
air fried zucchini |
|
cut zucchini into slices and spray with olive oil and seasoning
air fry 380F for 3 intervals of 8 minutes, shaking between
serve with powdered parmesan cheese |
air fryer baked potato |
|
wash potato, poke holes with a fork
optionally rub with olive oil, salt, and paper
air fry 400F for 30 minutes |
air fryer baked sweet potato |
|
wash potato, poke holes with a fork
optionally rub with olive oil, salt, and paper
air fry 370F for 40 minutes |

make-ahead greek salad |
- 1 english cucumber
- black olives
- 1-2 tomatoes
- 1 red onion
- 1 pack feta cheese
- 1 pack salad mix
- simple salad dressing

super easy lunch and lasts about a week of lunches
combine everything except salad mix in glass container (incl. dressing)
when ready to serve, put salad mix on plate and top with mixture |
country cobb salad |
- salad mix
- corn
- cheddar cheese
- crumbled bacon
- hard-boiled egg
- cherry tomatoes
- frozen chicken tenders

cook bacon, chicken tenders, and hard-boiled egg
combine and serve with dressing of choice |

burrito bowls |
- prepared pouch of quinoa or brown rice (garlic)
- fresh or canned corn
- black beans
- 1 bag salad mix
- pico de gallo
- avocado
- protein of choice

this is a note to self on how H and i enjoy burrito bowls. 1 package of listed ingredients yields 2 dinners for 2 people
bake or grill simply seasoned chicken or pan fry tofu with vegetable oil
microwave rice, corn, black beans
serve with sriracha mayo

army stew my way |
- shin ramen
- onion
- mushroom
- bacon
- spicy sausage or tofu
- garlic
- cheese

this is a note to self on how i make army stew, there's a proper way you can research if you want
grill vegetables and protein with a little oil
you can use whatever is around
add water, ramen, and seasoning packet, melt some cheese on top when served

freckled banana chocolate muffins |
- 1.5 cups all-purpose flour
- 1 cup sugar
- 1/4 cup baking cocoa
- 1 teaspoon baking soda
- .5 teaspoon salt
- 1/4 teaspoon baking powder
- 1 1/3 cups mashed ripe bananas (3 medium)
- 1/3 cup canola oil
- 1 large egg, room temp
- 1 cup mini semisweet chocolate chips

preheat the oven to 350F
whisk dry ingredients
separately whisk wet ingredients and add to flour mixture
stir until mixed and fold in chocolate chips
put it in muffin tins and bake for 20-25 minutes |
banana pudding |
- vanilla pudding

- 1 box nilla wafers

easiest way to make banana pudding and same as how my granny made it
prepare vanilla pudding and layer bananas, pudding, and nilla wafers |
diet coke cake |
- boxed cake mix
- can of diet soda

combine and bake a few minutes less than box recommends
duncan hines perfecly moist dark chocolate fudge + diet coke = very moist and not too sweet chocolate cake |
